A former tennis hall, rebuilt into Art Wine Hall during the pandemic, is now a modern wine-making center with a capacity of up to 350 people.
Among the main experiences you can try here are excursions to the winery. It specializes in the production of sparkling wines using the traditional champagne method & wine pairing. The complex also includes a stone wine shop and wine tasting rooms. For relaxation, there is the ARONN wellness center, ideal for birthday celebrations with bubbles (not only) in your glass.
Accommodation is provided for those who want to enjoy weekend wine programs such as Degorsage (making your own bottle of sparkling wine), Sabrage (cutting off the neck of a bottle with a saber), or oyster opening. With a dense planting of 12,800 vines per hectare and narrow rows 1.3 m wide, the Ebeny vineyard combines modern precision with respect for nature. The vineyard is a living example of biodiversity – herbs and natural ecosystems thrive between the rows, underlining the philosophy of organic farming.
Classic varieties such as Pinot Noir, Pinot Blanc, Pinot Gris, Chardonnay, and Merlot are grown here, as well as Central European Blaufränkisch, aromatic Gewürztraminer, and interesting varieties such as Rubinet and Neronet.


This is followed by the gentle pressing of whole grapes, which ensures gentle extraction of the musts. These are then divided into several fractions. As part of our blending philosophy, young wines are mixed with reserve vintages during this process, which guarantees the consistency of quality and character of individual products.
After this perfect balancing, in the next step, we bottle the wine with yeast for secondary fermentation in the bottle. This is followed by aging on yeast lees, which gives the wines depth and a delicate effervescence. A modern approach of our winemakers is combined with artisanal precision: remuage (shaking the yeast lees into the neck of the bottle) is carried out partly in traditional pupitres and partly automatically in gyropalettes. After degorgement (removal of yeast sediment), the wine is fine-tuned with dosage liqueur. Finally, the bottle is sealed with a cork and wire cage and complemented by an elegant designer label.
The winemakers from the Kurdějov Appellation, in collaboration with experts and professionals in the fields of viticulture and wine production, have created a pilot project of the first functional Romanesque-type appellation in the Czech Republic. This system is represented by a pyramid classification of wines and vineyards, that is monitored by an independent commission of professional evaluators. The entire project is taking place under the auspices of the Association of Sommeliers of the Czech Republic (ASČR) and Ivo Dvořák.
